Eat This Instead: Mayonnaise
8:00 AMHave you ever taken a look at the ingredients labels on your most commonly used foods? Chances are, if your food comes from a package, can, bottle or jar, there's likely to be at least one mystery ingredient that you can't pronounce or have no clue what it is. Allow me to demonstrate with Hellman's mayonnaise:
Soybean oil, water, eggs, vinegar, salt, sugar, lemon juice and...what is Calcium Disodium EDTA?
Calcium Disodium EDTA is a chemical preservative meant to prevent rancidity from oils, making it a commonly used ingredient in store bought mayonnaise. It's made from formaldehyde and cyanide, which are known carcinogens, as well as Ethylenediamine, a skin and respiratory irritant. While the FDA regulates the amount of Calcium Disodium EDTA it deems safe for consumption, the agency has recognized the need for further study, to determine whether its use can lead to birth defects, cancer or reproductive problems.

The good news is, if you love chicken salad and coleslaw like I do, there is an alternative that you can easily make at home, without the questionable additives. And as a bonus, it also manages to ditch the added sugar and (in my opinion) tastes better than the store bought stuff.
Homemade Mayo
Ingredients
1 cup oil (I like avocado oil or extra light olive oil, as they tend to have a more mild taste than regular olive oil)
1 egg
Juice from 1/2 lemon
Salt and season to taste (I love to make mine with 1/2 tsp. paprika and 1/2 tsp. chili powder)
Directions
Combine all ingredients and blend together using an immersion blender. An immersion blender is the easiest way to accomplish your own mayonnaise, but it can be done using a food processor as well. For more instruction on using a food processor to make mayo, check out this video.
To enjoy your mayonnaise, here is a coleslaw recipe I've been enjoying lately. My husband doesn't like coleslaw and even he gave his seal of approval on this one. I hope you like it too!
