Comfort Food Remade: A Pancake Alternative

Light, fluffy, golden, sweet - what's not to love about a good Saturday morning pancake? But if your body doesn't tolerate gluten, or if you find yourself feeling hungry again 20 minutes after you eat them, you may be interested in an alternative. Enter the Banana Bacon Frittata. It has the light, fluffy texture of a pancake, a natural source of sweetness, and something pancakes fail to offer - bacon. Who could deny bacon? It's also a much more nutritionally dense option, with the eggs offering a rich source of iron, phosphorous, selenium and vitamins A, B12, B2 and B5.


Banana Bacon Frittata

Ingredients:

  • 1 Banana
  • 1 Strip of Bacon - not all bacon is created equal. Look for one without synthetic nitrites or nitrates, like this one. The word "uncured" will typically indicate this type of bacon.
  • 4 eggs
Directions:
  1. Cook the strip of bacon to desired crispness. Remove from pan, but leave the drippings. Crumble the bacon.
  2. Blend the banana and eggs for about one minute. A longer blending time helps to create a fluffier frittata. 
  3. Pour egg mixture into the pan on medium-low heat, sprinkle crumbled bacon on top, and cover.
  4. Cook until edges begin to brown, about five minutes.
  5. Cut up and serve. If you're looking for a little extra sweetness, drizzle with a small amount of pure maple syrup.
There are times in the journey to make healthier food choices that you accept that the food you eat isn't going to taste as decadent as its unhealthier counterparts, but this isn't one of them. This is one of my favorite recipes, and my kids love it too. Enjoy!
