Maple Nut Toasted Trail Mix

While trail mix is often thought of as a healthy snack, many packaged versions add in some unhealthy ingredients, like preservatives and tons of added sugar, in the form of granulated sugar, candies like M&Ms and/or dried fruit. If you're interested in a cleaner option, or if you'd just like the ability to pick and choose the nuts and fixings you like best, a homemade option is a good, simple one. I only have a few nuts in the one below, but you can tailor it to suit your tastes as much as you'd like. 


To protect yourself from the sticker shock of buying several packaged nuts at the same time, visit a grocery store that has a bulk section, so you only need to buy as much as you need (Kroger at Coventry and Fresh Thyme both have a good selection). I love to use mine as protein-packed substitute for granola on my morning yogurt. The maple flavor, along with some blueberries, provides just enough sweetness to make plain yogurt more exciting.

Maple Nut Toasted Trail Mix



Ingredients:
1 cup almonds
1 cup cashews
1 cup pecan pieces
3 Tbsp. maple syrup
3 Tbsp. butter, melted

Directions:
Preheat the oven to 350 degrees.
In a bowl, mix together all of the ingredients, coating all of the nuts with syrup and butter.
Transfer the mixture to a parchment-lined baking sheet and bake for 15-20 minutes, until nuts have darkened and syrup has carmelized.

Allow to cool before storing in an airtight container for up to two weeks. Enjoy!
